About the Author
Raquel Pelzel's work has been featured in Saveur, the Wall Street Journal, Every Day with Rachael Ray, Shape, and Epicurious, among many others. Formerly an editor at Cook's Illustrated and the senior food editor and test kitchen director for Tasting Table, Pelzel has written more than 20 cookbooks and has judged Food Network shows including Chopped Junior and Beat Bobby Flay. Pelzel lives in Brooklyn, New York, with her two sons.

Some context: My housemate and I have full-time jobs, and my spouse has chronic pain and fatigue on top of running her own business, so even though I'm only the second-best cook in the household (according to spouse), I cook most of our dinners in. My housemate hates beans, our household is vegetarian, and I have a bunch of food allergies. So dinner is a challenge, let alone nutritious dinner we all enjoy.I love this book. So far I've tried the seedy power bars, the sweet potato, blue cheese, and pecan salad (substituting cashew mozzarella for blue cheese on my portion), the zucchini ribbons aglio e olio, and the quinoa & tofu bowl. The recipes are genuinely easy and delicious, there's a bunch I never would have thought to try on my own, and there's plenty of room for creativity and modifications to meet your needs, or just to keep your favorites from getting stale. Vegetarian sheet pan meals are hard to find free of charge, unlike sheet pan meals with meat in them, so this was definitely worth the $12 I paid.I do have a quibble or two with individual recipes. Whether it's worth cooking quinoa in a rimmed sheet pan, as a clumsy person, is marginal depending on whether the process would be more of a pain than washing the rice cooker after using it on any given night. And if you want the zucchini ribbons to be a full meal, you really need to add a lot to it -- though that's kind of the point of zucchini ribbons, and most things you would add can either be added directly to the pan, or don't need additional cooking, so I'm not sure it's really fair to blame the recipe.-Cameron Quinn
