About the Author
Bill Gillespie is the bestselling author of Secrets to Smoking on the Weber Smokey Mountain Cooker and Other Smokers, which has over 100,000 copies in print. He’s also the pitmaster of Smokin’ Hoggz BBQ, an award-winning barbecue team that has claimed top prize in the Jack Daniel’s World Championship Invitational Barbecue and the American Royal Invitational, as well as capturing hundreds of other barbecue awards. He lives in Abington, Massachusetts.
All of the grills I've owned have been Weber charcoal grills. I've grilled hamburgers and watched others do the same, too many times to count. So when I saw the recipe for "The Perfect Burger Every Time, Plain and Simple," I almost passed it by. But when I read through the recipe, I thought the cooking method was intriguing enough to try, and I ended up making the best batch of hamburgers I've ever made. Ever. That's all I needed in order to keep trying more recipes in this book. All have been wonderful.This is not a thick book, but it is packed with great grilling instructions and tips along with recipes for every course of a meal and then some. Many of the recipes are just plain better because of the grilling method used, but many recipes do incorporate a new twist or two in the ingredients. There are beautiful photographs of all of the recipes as well as multi-page photo sections of how-to's for the more challenging ones.The dessert chapter is fun and has a recipe for Grilled Lemonade, using, you guessed it, grilled lemons. If you've never had a grilled lemon, you're in for a treat. The wildest recipe in the book must surely be the one for Bacon Weave S'mores which uses rectangles of woven bacon in place of the traditional graham cracker base. I've not been brave enough to try this, which is also the most out-there recipe in the book (imo), but I have had quite a few requests to do so from friends who've now heard of the recipe!I highly recommend this book. Whether you are an experienced grillmaster or new to the wonders of cooking with fire, this book is sure to be of interest. --Curious Epicure
I purchased the Weber Mountain Smoker Cooker a few years ago. I always wanted to smoke brisket, ribs and chicken like the food I previously could only enjoy at a restaurant. I found Bill’s book on smoking and have been a fan since. This latest book for the Weber kettle grill was released last year, but I just discovered it this year 2019. The recipes are spot on and recipes that I would use. I’ve already tried the recipe for shrimp cocktail. Today, I’m grilling up the jalapeƱo, cheddar cheese and bacon stuffed hamburgers. I thought it interesting the different set ups for the grill to control the heat. I’m not sure I would use any, but good to see what’s possible. I like the formatting and photography for the book. The book lies flat so the pages don’t turn when following a recipe. The publisher could take a cue from some of the Weber produced books that include stickers to tab favorite recipes. Lastly, I was surprised that Weber’s rotisserie accessory wasn’t mentioned and a recipe and technique not included. I have the rotisserie accessory and it’s great and fun to use on occasion. In the meantime, the Beer Can chicken works in a pinch. I like Bill’s approach as he gives confidence to his readers that anyone can grill. --Sandy Desert
Book is very informative, though a bit elementary at times, meaning this starts off slow, like for those who don't know about differnt types of charcoal or grills. I mostly am intrigued by the different techniques and charcoal layouts, as well as pairing smoke chips up with the proper meats, cook times, fire management, grill layout, and other advanced information. Though i am not done, once the chance arises, i will give it a go and see how it turns out. I'm not a book guy, but this is a pretty good read so far. --Geno
