About the Author

John Campbell is Director of Cuisine and Food and Beverage at Dorchester Collection's Coworth Park. Professor David Foskett, MBE CMA FIH, is a best-selling author. He is Head of School at the London School of Hospitality and Tourism at Thames Valley University. Neil Rippington is Dean of the College of Food at University College Birmingham. Patricia Paskins, MHCIMA, is a hospitality lecturer and Work-Based Learning Fellow at the London School of Hospitality and Tourism at Thames Valley University.
To be honest if you are starting level 3 then the food safety info in here is stuff that you should know already and a lot of the other stuff is either in the same bracket or doesn't matter. The book is definitly worth buying though because there are some great recipes in it, and they should also get you thinking of more the book has inspired me to create 4 dishes so far and I have had it for about a week. It is worth buying for sure. --M. Love
