So far this book has impressed me. I have dealt with a few dud recipes and a few less than stellar books in the past and this book isn't one of them. Pros: Each recipe has photos, there are lots of neat cook's tips, each recipe is done through weight or volume or tsp/tablepspoon measurements making sorting the ingredients more exact and replacing them simpler, wide range of flavours and sweet treats, simple to follow instructions, uses generic gluten free plain and self-raising flour! I have had nothing but good experiences with this book. Although I think it is the sort of book more suited to people used to cooking dairy free and gluten free at a minimum - as sometimes if you can't find an ingredient you will need to substitute and know what works. However, that being said it's a beautiful book. So far I have made the Chocolate Banana Loaf (don't let it sit in the tin too long or it'll steam), the Green Tea Cupcakes (the shortening in the icing can be replaced with more margarine substitutes like nuttelex and I used eggs because of being short on other ingredients, so this can be turned into a non-vegan version), and the Almond Cupcakes (so darn good but the amount of almond extract can be re-worked and the other liquids adjusted to compensate). I use whatever generic gluten-free plain and self-raising flour is available in the stores - nothing specific or special, and the results have been great! As a rule of thumb I don't use xantham gum either. I cut it out altogether. Overall this book was a great find and I look forward to exploring it more!-Nell
