A Taste of Cuba: A Journey Through Cuba and Its Savory Cuisine, Includes 75 Authentic Recipes from the Country’s Top Chefs |
In a nation covered in mystery, a heavenly, yet generally secret food scene flourishes. A Taste of Cuba offers extraordinary access into the kitchens of Cuba's top gourmet specialists, where the nation's most heavenly dishes are made and where the culinary experts share for the absolute first time, their splendid procedures, motivation, and best plans.
Eminent Cuba picture taker Cynthia Carris Alonso and her Cuban spouse, José Luis Alonso, take you with them on their ride through Havana and around the nation, as they stop in Cuba's twenty top paladares—private, family possessed foundations. Inside you'll perceive how Cuban cooks are elite, ingenious, and creative, adjusting their dishes dependent on the changing fixings accessible available. Between visits with the cooks, you'll walk the avenues of Cuba, encountering its energetic, bright culture and seeing its lavish scenes very close.
A Taste of Cuba offers 75 unique plans provided by Cuba's top culinary experts, tried and interpreted for an American kitchen by gourmet specialist Valerie Feigen, permitting you to make staples, for example, ropa vieja, frijoles negros, and maduros—stewed meat, dark beans, and sweet plantains—just as for more detailed dishes, for example, eggplant caviar, fish tacos, and ham croquettes. It shares the formula for La Cocina de Lilliam's extraordinary bread, desserts, for example, fantastic alfajores con dulce de leche, Cuba's acclaimed espressos, and juices, and Ernest Hemingway's father doble daiquiri of legend.
About the Author
Cynthia Carris Alonso is an acclaimed picture taker, an essayist, and the writer of Passage to Cuba. Since 1992, she has routinely headed out to Cuba, archiving its news, performers, and culture for music recording organizations and distributions, for example, Newsweek, Vanity Fair, BusinessWeek, and People en Español. Alonso has showed up as a Cuba advisor on public TV, on paper, and on radio. Her pictures have displayed all through the United States and in Canada and Brazil. She lives in New York City with her better half and girl.
Valerie Feigen is a self-trained culinary expert who recently functioned as an attorney, stock investigator, and co-proprietor of Edit, a ladies' style strength store. At age seventeen, Feigen expertly prepared and sold her buttercrunch candy to food stores in New York City and Philadelphia. Feigen composes the blog recipistsdiary.com and every passage incorporates a memory and at least one of her unique plans. Feigen and Cynthia Carris Alonso met when they were five years of age and have been companions from that point onward. Feigen was the motivation for Marisa Tomei's character in The Big Short. She lives in New York City.
José Luis Alonso is an educator, essayist, and grant winning kids' book writer of Secretos con mi Almohada, distributed in Cuba in 1980. Alonso was conceived in Cuba and met Cynthia Carris Alonso, presently his better half, in Havana. Together, the couple has teamed up on various talks and shows to observe Cuban culture. Preceding working in the scholarly community, Alonso was a gourmet expert and eatery chief. He lives in New York City with his better half and girl.
In this beautifully written book, you will find fabulous and easy to follow recipes for such goodies as "cuatro leches" (four-milk cake), boniato and plantain chips, and La Guarida coffee (espresso with whole and sweetened condensed milk, rum, lemon peel, and cinnamon) as well as ceviche, salmon roll with eggplant, almond pesto sauce and my favorite, arroz con pollo (chicken with rice, p.50). The arroz con pollo recipe combines chicken, hardboiled eggs, peas, cumin, saffron threads, and a host of other ingredients, and is one of the best, and easiest dishes, I have ever made. This book of Cuban history and food makes a great gift---to yourself or anyone you know who loves to cook and eat. Bravo! -Laura Zinn
A Taste of Cuba brings you inside the unique kitchens of "paladar" restaurants, which are run by families out of their homes, and introduces you to their chefs. Mouth watering recipes sourced from chefs who cook by feel, rather than from written instructions, are presented to American cooks using familiar ingredients and measurements. Each recipe I tried was great! The narrative and gorgeous photos enrich your appreciation of Cuban culture and its vibrant culinary traditions. -Nelsonnih
I love this book because it’s a true entry into Cuban paladars and you even get to meet the chefs in them! Other Cuba cookbooks are “inspired” by Cuban food, but this actually has the top chefs in Cuba telling you their recipes from their very own kitchens. The dishes are delicious (party pleasers!) and there are gorgeous photos on every page. I love this book and I love gifting it. Highly recommend. -Simmon
