About the Author:
Paul Hollywood has shot to fame with his role as a judge on The Great British Bake Off. He worked as Head Baker at exclusive hotels including Cliveden and the Dorchester and he went on to launch The Paul Hollywood Artisan Bread Company, which now supplies Harrods, among others.
This is a great introduction to breadmaking. The instructions are clear, and there are lots of photos to illustrate the different stages and techniques. I have made several of the loaves, have my sourdough starter fermenting away, and am looking forward to trying some of the more advanced breads. Although the instructions specify hand kneading, I use my stand mixer because I don't have the strength in my hands for effective kneading. But my breads have turned out well following Hollywood's description of the correct texture. No more store-bought breads for me! --Spyro

I've been baking bread for years but this book was a revelation. I went back to basics and carefully followed Hollywood's advice. The result....the best bread I have ever cooked. The big secret, well it's actually no secret but many books don't emphasize it enough, is Take Your Time. His wonderful tasting bread can take many hours from start to finish, I started today's sourdough bread yesterday evening and it will be ready for lunch in a few hours. In fact I began the starter 3 days ago. But, as Hollywood also emphasizes, this is not 'Hands-on' time. You will only spend minutes actually handling and cooking the dough..the rest is spent 'proving' in a corner of your kitchen. For me, it has restored the fun and excitement of breadmaking, I'm addicted. --Shaman 

I think when it comes to bread making, it's important to find some technique that works for you and a mentor that you feel you can trust. Paul Hollywood comes up with a variety of different breads here and tells the reader a bit about them (for example, what goes well with them). For me, that was exactly what I wanted. I like his style, I like the variety of breads he's coming up with, I love looking at the pictures and just enjoy baking with this recipes. I used to be the absolute opposite of a bread baking expert, but following his advice made me feel a little more confident about it. So, for me, it's a good book! --Tanja
