Chris Prieto is a champion pitmaster and owner of Prime Barbecue in Wendell, North Carolina. His journey into cooking and the world of barbecue began when he was a child in Houston. Prieto's fond memories of Texas barbecue and desire to search out the "soul" of real barbecue sent him on his own personal quest to perfect slow smoked meats. Today, after many years of cooking on the professional barbecue circuit, Prieto has finally achieved what he considers barbecue excellence. This is his first book.
The pictures are gorgeous & it is organized in a way that is easily referenced by cut of meat. The basic rub recipe is amazing & you'll want to put it on everything. Bought a Weber kettle grill at the beginning of the summer and a few BBQ books. I've been grilling for years, but wanted to move from gas to charcoal & try it all from a fresh perspective. I cooked ribs, pulled pork, steak, chicken & used the side recipes too out of this book - they all seem regionally authentic & were delicious. I also purchased Weber's Big Book of Grilling at the same time & haven't used it once. The Ultimate book of BBQ got us through the entire summer with BBQs at least once a week! --Lisa M.
This book has it all from setting up your fire to finishing with sauces and sides for pork, beef, fish and fowl. We have bought 5 copies for relatives and friends and everyone is enjoying cooking out. We have tried about 4 rubs and 6-7 sauces and all are delicious. It will take us 2 years to try many of the recipes. You will not be disappointed! We upgraded smoker from a Brinkmann (lasted 24 ys) to Joe's Oklahoma Smoker this spring and now have excellent control of temperatures and smoking for 8-10 hrs without refueling. Friends have used medium Weber smoker and that one works well, also. --J. Michael Meyers
Good array of recipes for different kinds of meat... beef, pork, poultry, lamb/mutton and fish. Basic smoking instructions. Various recipes for rubs, sauces and brines. Main courses, side dishes and veggies many with a focus on incorporating smoked products into the meal...others just good and/or tradition side dishes for your BBQ.....Love this book. It doesn't go into detail about different types of smokers If you want to be a competition pit master look elsewhere. But for the weekend warrior who wants to make yourself happy and wow your family and friends with good BBQ..... this one's for you. This one is well worth owning. -Barefoodog
