About the Author
Steven R. Gundry, MD, is the director of the International Heart and Lung Institute in Palm Springs, California, and the founder and director of the Center for Restorative Medicine in Palm Springs and Santa Barbara. After a distinguished surgical career as a professor and chairman of cardiothoracic surgery at Loma Linda University, Dr. Gundry changed his focus to curing modern diseases via dietary changes. He is the bestselling author of The Longevity Paradox, The Plant Paradox, The Plant Paradox Cookbook, The Plant Paradox Quick and Easy, and Dr. Gundry’s Diet Evolution, and has written more than three hundred articles published in peer-reviewed journals on using diet and supplements to eliminate heart disease, diabetes, autoimmune disease, and multiple other diseases. Dr. Gundry lives with his wife, Penny, and their dogs in Palm Springs and Montecito, California.
This book starts out (for me) with a bang. The author dives right into the subject of lectins. These are proteins in plants that are like natural pesticides and they aren't all that good for you. Cooking and soaking does get rid of some of it but if you want to know why non-grain dog foods may be toxic to some dogs (recent findings) then you can probably blame the lectins. They are found in nightshade foods (eggplant, tomatoes) and also beans and legumes. Lectins upset your gut so they may be something to avoid. The one he focuses on is Wheat Germ Agglutinin that may minic insulin in your body and help to make you fat (why bread adds to your weight so insidiously as many of you observe.)

I am so glad that I pre-ordered this new book. I have been eating lectin free for over 1 year and am feeling better. This new book has many wonderful recipes that I have already tried and more that are next in line. My electric pressure cooker/slow cooker has been used a lot and the new cookbook has many more. I like the cranberry orange bread and cranberry sauce and feel like I can now have some "old" favorites. The recipes are easy to follow and use ingredients from my lectin free pantry items. I just had to add organic oranges for the zest. I also own the first cookbook and found more I want to make in this new book.-Nonnie 
I've been eyeing the other books in this author's repertoire and haven't gotten any. The cookbook with a precursor to the material was exactly what I wanted. So far there are a number of recipes I'll be attempting and will update if my opinion changes after trying them out! -Futharka21
