About the Author
Milan, where the living is fast and the cooking takes time. That is where Carlo Lai was born. But it was in the kitchen where he actually grew up, helping his mother stir the minestrone and stuff the tortellini in their family restaurant. When he was sixteen, Carlo began his formal cooking studies. Choosing the warmer weather of Sardinia, his family moved and opened a new restaurant called El Cervelee de Milan (The Good Tastes of Milan) where they still make their own bread and fresh pasta every day and cook great Italian food with a Sardinian touch.This is simply a beautiful book: the photographs are gorgeous, the pages are well spaced (not too crowded) and the pasta dishes look simply delicious. Not only that but the directions are clear, the author's voice comes through clearly and the recipes are well chosen. Oh, remember I said the dishes look delicious? They taste great as well.I haven't been able to prepare the pasta from scratch yet but all the sauces I tried were good. The basic sauces (bolognese, pesto, bechamel, napolitana, etc) are shown first, in the introductory chapters. Then, the following chapters are each dedicated to a particular pasta shape and the sauces that best suit it, referencing the basics when appropriate.-Reader
This is amazing! It was my first time making pasta from scratch and WOW. I have tried a few of the different recipies already and am SO pleased. If you're just starting out making your own pasta I highly recommend this book. -Mandi
